Oberyn, because of the ripples a freed Tyrion would make and it would keep Dany in Essos longer and up the chances of her running into A Girl.
Also it would off the Mountain, which would make Cersei topple faster or reveal the madness that is Qyburn, at least, and would keep Dorne from imploding. He really was holding that country together with abated vengeance.

Not to mention that she likely would have honestly allied with the join Northern and Targaryen forces against the White Walkers. Unlike Cersei who is like "Yes, sure. fine." while crossing her fingers behind her back.

If the White Walkers weren't a thing, it would change a lot.
The Night's Watch would be primarily a guard force in service against the only other 'threat' beyond the Wall - wildlings. Mance wouldn't have become King Beyond the Wall because the tribes would not have needed to unite against the common threat. Jon would stay at Castle Black, serving honorably, maybe as Lord Commander down the line, and that would be his life. He wouldn't meet Ygritte, he wouldn't let Wildlings through the gate and become labelled as a traitor, and he wouldn't be resurrected as a 'Fire Wight' and start interfering with things. >=/
Dany would take the Iron Throne eventually, with 'Lady Stark' Sansa casting her lot with the Dragon Queen towards the end due to her own well-fueled hatred of the Lannisters (especially with Cersei being responsible for the death of her only 'friend', Margaery). The Army of the Vale could still take out the Boltons, as the wildlings Jon had led had only served as fodder for the most part in the Battle of the Bastards anyways. So Sansa would have Winterfell.. along with Littlefinger. Which would bring up new problems I won't even begin to speculate about here.
No 'Jon is King In The North' message to Arya from Hot Pie means she would continue her original plan to go to KL and kill Cersei (I doubt she would have gone just for Sansa, to be honest). Which would be extremely helpful to Dany for obvious reasons.
Lots of other little details would be included as well, but that would be an entire fanfic of its own, come to think of it... that was kind of a brutal question LOL

Now, to be fair, with a little fudging and creativity you could have Jon have his wildling love and his wildling BFF. Like. maybe Mance did unite the tribes against a common enemy. - The Wall and the Night Watch. But maybe, not all of the wildlings were okay with this. Maybe a few decided to go turn their cloaks, as it were, to warn the watch in exchange for amnesty. -shrugs-
Seriously, without the White Walkers, and just going off what you said, theres a dozen more things I could do to really change things up, yet also keep things the same.

Arya I think I'd change her single minded focus on vengeance. While her list of names help her get through some dark times and motivated her. It became all that she was for the longest time, up until she declared herself "Arya Stark of Winterfell" and even then she left the House of Black and White to finish that list. I think she forgot how to live outside of Vengence and just surviving. And I think its what set her on the path that lead her to the Faceless Men.
for Dany. Her sense of doubt. Her Doubt, usually in herself lead to some of the worse things that have happened to her. It caused hesitation where she shouldnt have hesitated. To quote a spit fire of a old lady known as the Queen of Throns. "Be a Dragon", because when she isnt doubting, she is fucking bad ass.
